Vasja is definitely one of the most interesting Slovenian winemakers.
He impressed us not only with his three-storey cellar dug into a boulder where everything is based on gravity and not one pump is used but also with his approach to the production of biodynamic wines using the Nykolas Jola method.
Vinification, or the fermentation of grapes with only natural yeast and without added sugar belongs among the principals of biodynamic wine producing. The wine ages in new and old barrels from 225l to 2000l and is bottled without being filtered. The vineyards are in the Pecina, Olarija, Vrt, Drazna, Dusce, Polje, Kot, and Ivanji grad about 5 km from the sea.
